Ground Turkey Meatloaf with Sundried Tomatoes

I was inspired to try something different with ground turkey after recently catching a small glimps of a food network show where the gal was making turkey meat loaf.  I like to add things to turkey to keep it moist and to add flavor.  She was using some sun dried tomatoes and I happen to have a big jar on hand…  so this is what I came up with!  I prepared mine in the grill because it was still pretty hot outside and i didn’t want to run the oven.  I recall having meatloaf that was reheated by frying slices in a tad of hot oil in a skillet and that is what she had done.  I’m sure that it would be great served fried and would add a bit of crispiness, but this was flavorful and delicious simply as prepared!

Ingredients:

1 package of ground Turkey (1 lb)
1 Large sweet Onion
1 Cups Panko bread crumbs
2 Tablespoons Chicken bullion powder
2 Egg beaters
1 Cups Sun-dried tomatoes, marinated in oil chopped fine
1 Tablespoon Italian seasoning
Salt and freshly ground Black Pepper

I preheated the grill to about 350-400 degrees.

Saute the chopped onion in a bit of oil until translucent.  Mix all of the ingredients thoroughly in a large bowl and press into a bread pan that has been sprayed with non-stick cooking oil.  Cover and bake about 40 minutes or so until the internal temp reaches 165.  Top will be browned slightly.

Our family is not big on tomato soup or ketchup on top, so we skipped that part.  if you like that, remove cover and spread on top and return to bake uncovered an additional 10 minutes or so.

Allow to rest before slicing!
