Bon Appetite!

Baked Artichoke Dip

Written By: Chris - May• 01•12

This is a “go to” appetizer dish that I prepare quite frequently.  It’s simple and it seems guests like it either with crackers or with crustini’s.  I almost always have the ingredients on hand and will spruce it up from time to time by adding fresh spinach, but it’s delicious just as is.  I add half of the plain Greek yogurt in lieu of using all mayo just to reduce some of the fat.  You really can’t tell the difference and it tastes great!

This recipe is good in a crock pot as well if you have to keep it hot for a long time.

Ingredients:

1/2 Cup Mayonnaise
1/2 Cup Greek Yogurt
2 Cans Artichoke hearts
1 small call of Chili Peppers, chopped
1 Cup grated Parmesan Cheese
8 oz. of grated Mozzarella Cheese
pinch of Garlic Salt

Make sure you get the “non marinated” artichokes and drain them well. chop them up very fine.

Combine all other ingredients and mix gently.  Pour mixture into baking dish that has been sprayed with non-stick cooking spray

Bake 350 for 25-30 minutes until cheese starts to brown on top and edges

Enjoy!

Cheers!
