Baked Brie, Swiss and Mushroom Stuffed Loaf Appetizer

I recently had this dish when friends brought it over prepared in a round sour dough loaf.  I basically made it with my own revisions and since I was having several guests, decided to hollow the center of a french bread loaf.

Ingredients:

2 Tablespoons Butter
1/4 Cup Onion, chopped fine
2 Garlic cloves
12 – 14 ounces Fresh baby Portabella Mushrooms
1 (8 ounce) wedge Brie cheese, rind removed, cubed
1 (1 pound) loaf French Bread
1/3 Cup Parmesan cheese
1/3 Cup Red peppers
1/2 Cup Swiss cheese
3/4 Cup fresh Spinach
2 teaspoons White Pepper

In a saucepan over low heat, melt the butter. Saute the chopped mushrooms until tender.  Add onion, peppers and garlic and cook until the onions are translucent.   Mix in the Brie until melted smooth.  Add Swiss and Parmesan cheese as well as the chopped spinach. Cook and stir until melted and well blended.

Remove the top of the French bread loaf allowing the sides to come up while shaping sort of a bowl hollowing out the center. Spoon the mushroom and cheese mixture into the bread. Sprinkle with Parmesan cheese.

Place the filled bread on a baking stone, and bake at 400 for about 15-20 minutes until the top is lightly browned.   Then change oven to boiler setting and cook while watching carefully until cheese is nice and brown.  Cool slightly allowing the filling to set up, and slice into wedges to serve.
