BBQ Pork Sandwiches

I try to create dishes based on ingredients that I have on hand! I recently had some left over Pork Tenderloin, had a small part of a slab of restaurant dry-rubbed baby back pork ribs and decided they would be delicious transformed into easy barbeque sandwiches along some delicious Cole-slaw that my friend Mel had given me her recipe for!  You could create something like this with chicken or a combination of both!

Ingredients:

1 large Sweet Onion
1 Tablespoon Butter
1 teaspoon Oil
2 Cups chopped cooked Pork Tenderloin
Meat pulled from a half a dozen or so BBQ Pork Ribs
3 Garlic cloves
1 1/2 Cups Chicken stock (I used homemade stored in the freezer)
1/3 Cup of your favorite store bought BBQ Sauce
Sat & Pepper

Dice onion into small pieces and saute in butter and oil over medium low heat until caramelized. Chop pork tenderloin and pork from the ribs into small cubes.  Place onion and meat into a crock pot, add crushed garlic and other ingredients.  Allow to cook and blend flavors for a minimum of one hour over medium heat.  Serve on toasted buns an along side of your favorite side dishes!

I served this along side of coleslaw and some left over potatoes and onions.  I chopped the potatoes into smaller pieces and seared them to reheat quick in a touch of oil adding chopped green onion, rosemary and thyme.  Season with salt & pepper!

We enjoyed this with a wonderful Joseph Phelps Merlot!
