Breakfast Egg Scramble

I like to have things that are quick and easy to grab in the mornings for breakfast.  There are many mornings where an English Muffin hits the spot, or some Greek Yogurt doctored up with fresh fruit.  Bill would prefer something hot most days and is usually “starving” after the morning work out!  I like to cook  up some egg scramble on the weekend so that he can have quick go and grab left overs heated in the microwave to create a muffin sandwich, or just eat along side.  I do splurge on some cheese now and again, but this is filled with vegetables and is prepared with egg beaters, so it’s actually pretty healthy!  You can mix this up by using just about any meat and/or veggie you’ve got on hand!  Add some fresh herbs that are in season and make it something special download thalia ebook.

Ingredients:

1/2 Onion (sweet)
1 teaspoon Butter
1 teaspoon Oil
2/3 Cup chopped Red, Yellow and Orange Peppers
1 Garlic clove
1/2 Cup chopped Deli Ham
2/3 Cup Egg Beaters
1/3 Cup shredded cheese of your choice
Salt & Pepper

Start by sauteing the onions in the butter and oil until nearly translucent.   Add the chopped ham and allow to cook over medium high heat until it browns somewhat.  Add the garlic and peppers and cook for few minutes just until they start to become soft kostenlos counter strike source downloaden.

Toss and scramble until eggs are cooked all the way through.  Sprinkle with cheese, turn off the heat and cover with lid allowing cheese to melt safari browser.

Enjoy along side of your favorite fruit, top with salsa and/ or light sour cream.  Or place on top of an English Muffin!
