Broccoli Bacon Salad

This has been the most requested salad of the summer!  Everyone seems to love it.  I almost always have everything that goes in it on hand in my fridge, freezer and pantry, so it is a “go to” often!  I’ve prepared it for graduation parties, Sunday dinners with the family, friends pig roasts’, weddings and most recently for “Monday Night Families”.  MNF is a time for families and young adults to come together for a meal and fellowship.  Bill and I have found pleasure joining a terrific group of people we are proud to call friends, who all donate food and/or time serving on the 1st and 3rd Monday of every month.  It is a 6pm meal offered to anyone and all those who are hungry and/or lonely.  They are invited to join at the New Life Church in Ramsey, near our home for delicious food and wonderful people!

I think most of us know that broccoli is a real good choice and has many health benefits!  There are too many to list, but one of the main reasons I am happy that Bill finally started eating it is because it contains magnesium and calcium that help regulate blood pressure!  He just had his annual blood work done and though this dish isn’t the most healthiest in regards to fat, including broccoli into his diet makes it a good choice over all; as all of his numbers have come back improved!  You can prepare this with low fat mayonnaise, but if it’s for a gathering I just wouldn’t do it.  Just use the real thing because it just makes it taste that much better!

This salad is simple to make and is perfect for just about anytime and I hope you’ll agree that it is really good!  This recipe feeds about 20 people.  I don’t usually measure, but did for those who have asked!

Ingredients:

1 Heaping Gallon Ziplock of Fresh Broccoli, cleaned and cut into small pieces
2 1/2 Cups Hellmanns Mayonnaise,  the real stuff
1/3 Cup Milk (I use buttermilk if I have it on hand)
1 Cup Bacon, chopped fine
2/3 Cup Onion, sweet Vedelia minced or chopped fine!
1 1/2 Cups Sunflower Seeds, toasted and salted
1 Cup Craisins
Himalayan Pink Salt, 12 cranks
Fresh Ground Black Pepper, 20 cranks
3 Tablespoons Sugar

I purchase the large bags of broccoli from Costco and trim off removing the tough stalk at the end of the flowerets.  If you’re using whole broccoli, trim the large leaves from the broccoli stem and cut off the tough stalk of the flowerets.  Wash the broccoli head and cut the head into flowerets into bite-size pieces.  Set aside.

In a bowl, combine the mayonnaise with the milk, sugar, salt and pepper.  Stir in the chopped onion, crumbled bacon, craisins and seeds.

Stir well before adding the broccoli.  Mix and toss gently until all components are covered in sauce.  Serve chilled immediately.  The texture is so wonderful.  Crisp broccoli, crunch from the onion, bites of buttery nuts and a hint of salt from the bacon makes a perfect blend with the creamy sweet sauce.
