Buffalo Chicken Pasta Salad

My kids all love Buffalo Chicken!  Bill does as well and pasta is always a favorite for him!   There has been some dispute about who came up with the original hot wing appetizer, but most credit the Anchor Bar in Buffalo, New York, USA according to About.comHome Cooking.  The historic creation date for Buffalo Wings was October 30, 1964 when owner Teressa Bellissimo was faced with feeding her son and his friends a late snack.  Having an excess of chicken wings on hand, she fried up the wings, dipped them in a buttered spicy chile sauce, and served them with celery and blue cheese dressing as a dipping sauce to cut the heat and the wings were an instant hit.

I’m always trying to create dishes based on ingredients that I have on hand and when we were recently headed for the lake, I noticed buffalo sauce in my fridge; figured it isn’t just for wings, and I came up with this salad!  I always have pasta of some sort in the pantry and thought the spicy, zesty hot sauce flavor would be good in combination.  The kids say it is good on just about anything, while I think it pairs perfectly with chicken and blue cheese.  I had some left over cooked chicken; some celery, red peppers and ranch dressing, as well as some blue cheese; so combined with a little pasta, it worked and this salad!

Ingredients:

1 1/2 Cups Chopped cooked chicken, left over of any type
1 Can Chicken, drained
1 lb. Pasta, cooked and cooled
2/3 Cup Mayonnaise
1/3 Cup Ranch Salad Dressing, I used prepared Hidden Valley 
2 Tablespoons Ranch mix
2 oz. Blue Cheese, crumbled
3/4 Cup Hot Sauce (Cholula Original or Franks)
Red Bell Pepper, chopped fine
Celery, chopped fine
Green Onion, chopped fine
Salt & Pepper, to taste

I had seasoned chicken skewers, but you can use any type of left over cooked chicken.  I also used one can of canned chicken, drained.  Cook the pasta according to package directions and cool without rinsing.  I chose a mini pasta named Stellette, which are mini Star Shaped Pasta; but any type will work!

Chop the vegetables and combine with the other ingredients.

Stir in the pasta and toss until evenly coated.  Add the crumbled cheese.

If the pasta is too dry, add more ranch dressing.  Refrigerate at least one hour and serve chilled.
