Butternut Squash Risotto with Cod

Risotto, one of Bill’s favorites!  By adding the Squash and serving it with a nice firm white fish…
we’ve convinced ourselves the Risotto is somewhat healthier! 

When watching our intake, Risotto is a treat… because it’s somewhat high in points.

Ingredients:
1 medium Acorn Squash
Olive Oil
Kosher Salt & fresh Ground Pepper
12 oz. package of Arborio Rice
2 Tablespoons Butter
1 small Onion, chopped fine
1/3 Cup of dry white wine
1 Pinch of Saffron
6 Cups or so homemade Chicken stock
1/2 Cup of grated Parmesan Cheese
1/2 Nutmeg kernel – grated

2 Fillet’s of Cod
Dry rub: dehydrated Onion & Garlic, Salt, Dill weed, Parsley, Celery seed, pinch of Sugar, Paprika & Lemon peel
1 Tablespoon Oil & Butter

Instructions:
Cut squash in half, remove seeds and insides by scraping the inside with a spoon.  Drizzle with oil and salt & pepper.  Bake at 350 for about 40 – 45 minutes or until soft.

In medium stock pot, warm homemade chicken stock and keep hot.

Melt butter and add onions.  Cook over medium heat until onions are translucent.  Stir in rice until well coated in butter.  Add wine and saffron and stir until wine is completely absorbed.

    

Add enough of the chicken stock to just barely cover the rice.  Cook and continually stir until it is absorbed.  Continue cooking in this manner, add in the broth a bit at a time.  (if you run out of stock before the rice is cooked, water may also be used).  Grate in fresh Nutmeg.

 

The rice will be done when it is tender, yet a bit al dente (from 20-40 minutes).  At this time, remove from heat.  Remove skin from squash and chop into small bite size pieces

 

Stir in grated parmesan cheese and cubed squash.  Salt to taste.

 

Rice will appear creamy and moist!  Serve at once.

Cook Cod in separate fry pan.  Melt butter and oil, saute over high heat (about 3-5 minutes per side)

You don’t HAVE to serve fish with white wine.  We enjoyed this with a 2005 Cosentino’s Secret Clone, which is a delightful red Bordeaux variety/Meritage.
