Cape Hake & Grilled Zucchini

So I had never heard of “Cape Hake”…  Have you?

I actually bought some frozen at a reasonable price after sampling at Costco.  To help you understand what we describe it as… It reminds me of a combination of Tillapia and Cod.  Bill says it reminds him of Walleye. None the less, I decided to grill it along with some fresh Zucchini.

 

It was a BEAUTIFUL Minnesota (early) spring evening and we wanted to hang out on the deck….

For us, there isn’t much more wonderful than enjoying time out on the peaceful deck… soaking in the tolerable temperatures of the “off seasons” where it isn’t too cold of winter months, nor too hot and humid from our summer days…  Also, there isn’t much better than the flavor of GRILLED (anything)!!

This dish is not going to include an “ingredients list”, rather if you simply follow along, I’m confident you can prepare it as you’ll see you likely have most of the ingredients on hand….  I did!

Slice Zucchini (yellow and green) into very nice thin pieces, leaving the skins on for added nutrients.  Dress with extra virgin olive oil and simply season them with salt and pepper.

For the fish, use an oil that can handle the heat of the grill.  I use vegetable or Canola oil.  Mix it with about two tablespoons of Dill paste, one tablespoon of freshly squeezed lemon juice and one large crushed garlic clove.  Distribute evenly on the fish and season with salt and pepper.

   

Place the fish on a clean grill that has been heated to medium high heat and sprayed with nonstick cooking spray.

Cook for roughly three to five minutes without moving… until you can see the fish turning from translucent to white in color.

 

Once the fish has begun to turn white in color, add the zucchini.  Turn the heat to high.  The zucchini will only cook for about a minute or two on the first side prior to turning!

We did not have a carbohydrate with this meal because we had enjoyed some crustini’s earlier sipping on the delicious wine.  What a delightful, delicious and healthy meal!

I’m going to share some of the other pictures from our time on the back grill… I hope you can feel the enjoyment we had in the ambiance we experienced with this great dish!
