Sweet Tomatoes and Basil are in season! Mmmmm! The Caprese salad is one we eat pretty regularly! We change it up a bit and everyone stay’s happy! This one is cut smaller like a Bruschetta – so you could serve it on a baguette or crustini – or just enjoy with a fork!
You can literally make this dish in about five to ten minutes. It’s a quick simple appetizer or side salad. By adding the small chunks of Mozzarella, it adds nice texture. I forgot to take a finished picture of this dish, but you get the drift!
10.5 Oz. Cherubs Salad Tomatoes
1 Green Onion
1 Garlic clove, pressed
2 Tablespoons Balsamic – California Fig
1/3 Cup cubed Mozzarella
1 Tablespoon Extra Virgin Olive Oil
2 Tablespoons Basil (to taste)
Fresh ground Black Pepper
Wash and cut your sweet tomatoes in half. Cut the green onion and Mozzarella cheese into small cubes. Combine with all other ingredients, chill and serve!
You can use regular Balsamic Vinegar if you don’t have the specialty flavor. I just like the Fig for a sweeter, bright summer flavor!
