Fresh Cherries are in season and we have had a bunch of them on hand. Bill loves them but one can only snack on so many before getting tired of them. I was trying to think of something I could make utilizing some of them. Bill favorite pie is cherry so I was thinking about some sort of strudel, but just didn’t want to fire up the oven in this heat! Besides, I keep trying to reach for the lighter options… We have strawberry shortcake all the time, so why not cherry instead?
I decided to add a little bit of a twist and included some cherry flavored alcohols. These also helped make a nice sauce to pour over the cake.
4 Cups Fresh Cherries, pitted and chopped
1/3 Cup Xylo (Sugar works too)
2 Tablespoons Cherry flavored Vodka
2 Tablespoons Amaretto
Angle food cake or mini shortcake, biscuit shortcake – which ever you prefer
Whipped topping (ours was fat free and tasted terrific!)
Wash the cherries and go through the task of removing the stems and pits. I simply used a paring knife and it worked pretty well. Cut each cherry into several pieces
Mix in the sweetener and the vodka and allow to sit for at least an hour in the refrigerator
spoon over your favorite shortcake type and top with whipped topping!
