This is a dish I prepared recently, while visiting my friend Jen. She was hungry for something creamy and this hit the spot! Wikipedia’s description of Fettuccine Alfredo is a pasta dish made from fettuccine pasta tossed with Parmigiano-Reggino cheese and butter. As the cheese melts, it emulsifies the liquids to form a smooth and rich coating on the pasta. In the United States cuisine it is sometimes mixed with other ingredients such as broccoli, parsley, cream, garlic, shrimp and/or chicken! You can use whatever pasta you like and this would be a treat and not something Bill and I would eat very often. Although chicken and broccoli are good for us, along with it’s rich, decadent sauce it packs a lot of fat and calories that we just don’t need.
2 skinless, boneless Chicken Breasts, pounded
Dry Fettuccine or Spaghetti Pasta (6 ounces or so)
3/4 package Cream Cheese (8 ounce)
1/2 Cup grated Parmesan Cheese
1/2 Cup Sour Cream
2 Tablespoons Butter
2 Tablespoons Olive Oil
1/2 Cup Milk
1/2 Cup Heavy Cream
1 Cup Chicken Stock
2 Garlic Cloves, minced
Salt and Pepper, to taste
1/2 Onion, chopped
Start by cooking the onions down in half of the butter and oil about ten minutes. Meanwhile, pound out the chicken out by placing the breasts between two pieces of parchment or wax paper and using a wooden roller or meat mallet, pound them into an even ½-inch thickness. This tenderizes the meat and ensures even cooking.
Season the chicken with salt and pepper. Slice the flattened breast into thin slices and brown it in the remaining butter and olive oil over a medium high heat until cooked through. Turn the heat down and add minced garlic. Saute for about a minute. Combine with the cooked onions.
Bring a large pot of salted water to a boil. Add pasta, and cook for eight to 10 minutes, or until al dente; drain and set aside.
While pasta is cooking, melt cream cheese, chicken stock, cream and milk over low heat. Stir until smooth. Stir in the parmesan cheese and sour cream. Simmer on low until thickened, and warm through stirring constantly.
Mix in chicken and broccoli that was heated in the microwave, or until vegetables are tender. Serve over pasta.
Serve with some warm Italian bread and a side salad.
