Chicken & Fig FlatOut Pizza’s with Pecan

Well if you have been following us, you know I’m a big fan of “FlatOut” products!  They are low in fat, good source of fiber and of course, perfect for super easy pizza, wraps or pinwheels.  I love the fact that they are low in calories and really enhance the distinct  flavors of what ever you are feeling!

On this particular “girls night” for the Bachelor, I was heading out for the evening rather than host when Bill inquired whether or not I would let him go hungry… Of course that never happens, so I prepared enough to leave for him to enjoy!  If you want to see how he rated it and paired it with his wine, see his blog!

On our ladies night I try to make a finger food if I’m transporting.  I also wanted to use what I had on hand as usual.  Who doesn’t love Chicken?  I was wanting the sweetness of Fig, so I combined it with sautéed Onions and Garlic, the richness of some terrific St. Andre Cheese (which is a triple Cream Cheese made in France), the buttery flavor of Gruyère and the punch of fresh Rosemary!

Try this, you’ll love it!

4 FlatOuts
Dalmatia Fig Spread
1 large Onion
2 Garlic cloves
1-2 Tablespoons Olive Oil
Cooking spray
1/2 Pecans
1 Cup cooked, chopped Chicken
1/3 Cup Rosemary
1 Cup Gruyère Cheese
1/2 Cup St. Andre
1 Cup Mozzerella

Start by sauteing your Onions in the Olive Oil until translucent.  Add your Garlic and cook until caramelized.  In another pan, dry toast your Pecans in a non stick pan.

While you par-cook your FlatOuts in the oven (spray on either side with a little cooking spray and bake on stones at 400 for a couple of minutes per side until slightly toasted) chop your Chicken and Rosemary.  Shred your Gruyère.  Keep the St. Andre in the freezer for several minutes while you’re preparing other ingredients so it will be easier to crumble onto the pizza.

I used store-bought shredded part-skim Mozzarella cheese and used a prepared Fig spread, which can be purchased in the specialty section of your local grocery store.


Warm the Fig spread slightly in the microwave so it is soft and easy to spread on the FlatOuts.  Sprinkle with about half of the Mozzarella cheese.  Add chunked Chicken, chopped Pecans, Rosemary, Onions & Garlic and spread crumbles of the Cream cheese throughout.


Top with additional Mozzarella cheese and bake until cheese is melted and browned.

Let rest for a few minutes before cutting.

I enjoyed mine with a favorite Cosentino Syrah & Bill had his with a Williams Selyem Pinot.
Each were DELICIOUS!
