My friend Melania recently shared her version of Cole Slaw. She brought some over for girls night just following her sons high school graduation party. I’ve made a number of different versions of slaw, but I have to say this recipe was really delicious! We’ve eaten it a couple times since!
1 head Green Cabbage, cored and shredded
2 Green Onions
2 Cups Mayonnaise (I used light!)
3/4 Cup Sugar (Splenda)
1/4 Cup Dijon Mustard
1/4 Cup Cider Vinegar
2 Tablespoons Celery seeds
1 Teaspoon Salt
dash of White pepper
Place cabbage, (2 medium-size Carrots, peeled and grated – optional, but I was in a hurry!) and onion into a large bowl and set aside. In another bowl, combine together all of the remaining ingredients. (I might use slightly less celery seeds next time around)
Pour over the vegetables and toss well to combine. Cover the coleslaw and refrigerate for at least an hour for the flavors to mend.
