Dijon & Pineapple Chicken

I found a recipe that had Dijon and pineapple in it about 25 years ago on the back of a can.  I’ve been making it ever since with a few modifications of my own, served over Rice. Both Bill and I really enjoy the flavors and the cooked pineapple.  This dish contains Marjoram, which is a herb  that has hints of sweet pine and citrus flavors.    Give it a try when you want a quick hot but fresh dish that is delicious, healthy and just overall something different!

Ingredients:

2 large Onions
3 lbs. Chicken tenderloins
3 stalks Celery
1 (20 oz) can of Pineapple (also added about 1/3 Cup of fresh that I had on hand)
2 Tablespoon Brummel & Brown (butter)
2 Garlic cloves
1/4 Cup Dijon Mustard
4 Tablespoons of fresh chopped chives
1 Tablespoon Worcestershire sauce
1 Tablespoon crumbled Marjoram
1 Can Water chestnuts
Salt & Pepper

Drain pineapple, reserve juice.  Saute celery and onions in butter until translucent.

Add cubed chicken and cook seasoning with garlic, salt & Pepper.  Add chestnuts and reserved pineapple juice to skillet.  Allow it to simmer reducing some of the liquid.  Stir in mustard, Worcestershire, chives and marjoram.  Serve over white rice!
