Rosemary Grilled Potatoes

Even when you are in a hurry, you can prepare a delicious, flavorful meals that include potatoes!  I reach for the “Simply Potato” wedges and keep them on hand in the fridge for quick and easy preparation and to have as an addition to meals when I’m in a hurry.  Although I love to cook and spend time in the kitchen, I’m OK with making life simple from time to time and these potatoes on the grill are just that!  This meal was thrown together and cooked in less than 45 minutes!

Ingredients:

1 package Simply Potato wedges with Rosemary
1 Vedalia Onion
1 Tablespoon Vegetable Oil
3 sprigs fresh Rosemary
1/4 Cup Brummel & Brown (Yogurt butter)
Salt & Pepper

Start by chopping and sauteing the onions in oil.  Cook until translucent and starting to caramelize.  In the mean time, chop the potato wedges into bit size pieces and microwave for five minutes on high.

Simply potatoes are cleaned and raw.  They offer them seasoned and in many shapes; from wedges to cubed, to hashbrowns.  What’s nice about them is you can use as little or all of them depending on the meal you are preparing – just by taking out what you need and leaving the remainder in the refrigerator.

Combine the par-cooked potatoes with the onion on aluminum foil that has been doubled up – for grilling!  Season with Salt & Pepper

Blot with “butter” (Brummel & Brown, keeps it healthy and still tastes great!) and top with a few sprigs of fresh rosemary.  Fold over foil and fold in and seal edges.

Place on grill and cook on medium high heat for about 20 minutes.  Turn at least once half way through.

We enjoyed these as a side to some pork country style ribs and a beet salad!  We also enjoyed a nice Turley “Old Vine” 2008 Zin!
