Bon Appetite!

French Green Beans with Almonds

Written By: Chris - Apr• 15•12

French green beans make a wonderful side dish!  Recently, Bill  kept telling me that with all the fish and chicken that I have been incorporating into our diet that he had been craving shrimp and steak for weeks!  With the record warm temps we experienced a few weeks back in Minnesota, grilling was definitely a must do… Too bad it’ not very nice out today!  The weather man says it might even snow again tonight!  Yuk!   So I prepared him his meal on the barbeque and served them with these terrific fresh green beans.

Ingredients:

1/2 pound of fresh Green Beans.  I love the French style from Costco!
1/2 Cup slivered Almonds
1 Tablespoon Butter
1 Tablespoon Olive Oil
1/2 Lemon, juiced
Salt & Pepper to taste

Place the beans in a saucepan and cover with water; Add about a tablespoon of salt and cook until crisp-tender.  (About five minutes or so.  I taste and wait until the “squeak” is gone)
Meanwhile, in a skillet over medium low heat, toast the almonds in butter until golden brown.  Remove from the heat; stir in lemon juice and salt & pepper.  Drain the beans and toss them into the almond mixture.  Add oil and allow to cook on high while tossing and browning until evenly coated.

While I was busy in the kitchen, Bill wandered down to our cellar and grabbed a 2003 Alexander Valley Silver Oak.  It was an amazing meal!

Enjoy!

Cheers!
~Chris
