Bon Appetite!

Grilled Fresh Peaches with Balsamic

Written By: Chris - Jun• 29•12

We love grilling and now that it’s summer, we do it a lot more.  We enjoy the terrific flavors created from the grill,  but also choose to so some of our cooking out doors so that we can cut back on efforts of the central air conditioner!  A few years ago, I recall watching a show with Bobby Flay BBQ’ing Peaches!  He made a nice reduction and served the peaches with Prosciutto.  It also had served it with fresh basil and although I had prepared his dish that way in the past and it was great – I was just working with what I had on hand and created a more simple version for a recent dinner. Peaches are beautiful at the store right now so I had a few in the fridge.  I wasn’t surprised with my kids reaction to trying some… but I knew Andrew would give them a try!  Bill and I love these!

Ingredients:

2 Fresh Peaches
Extra Virgin Olive Oil
1 teaspoon honey
Sour Cream, for garnish
Salt & Pepper
1/3 Cup Balsamic Vinegar (reduced)

Place the vinegar in a small saucepan and bring to a simmer over high heat.  Watch carefully and turn down the temperature if you are busy preparing other ingredients.  Cook until thick and syrupy.  Stir in the honey and season with a dash of salt and pepper. Let cool slightly (It will keep thickening as it cools).

Drizzle and rub the peach halves with olive oil. Place on the hot grill, cut side down and grill until golden brown. Turn over and grill for 1 minute longer.  They will be soft on the outside somewhat, but remain firm in the center.

Remove the peaches from the grill and drizzle with the balsamic.  Top with a dollop of sour cream.

These can be served as a nice addition grilled side dish to about any dinner!

Enjoy!

Cheers!
