Ground Beef & Gravy with Mashed Potatoes

One of my fondest memories of grade school lunch was hamburger and gravy over mashed potatoes.  Recently, I had some fresh ground beef and was looking for a simple, but delicious dinner idea and created this meal based on memories and items that I had on hand.  I added some broccoli and though it was simple, it was really good!

Ingredients: 

1 Onion, chopped
1 Pound of 80-20% Ground Beef
3 large russet potatoes, washed and cut into equal sized chunks
2 Tablespoons Butter,  for potatoes
1/2 Cup Milk or Half and Half, for potatoes
1 package Birds Eye Steamfresh Fresh Frozen Broccoli Florets
2 Tablespoons Butter, for gravy
1 Cups Milk, for gravy
1/2 Cup Potato Water, reserved for gravy
2-4 Tablespoons Johnny’s Beef Au Jus Concentrate
1/4 Cup Flour
Salt and Black Pepper, to taste

Place the potatoes into a large pot, and cover with salted water.  Bring to a boil, reduce heat to medium-low.  Cover, and simmer until tender, 20 to 25 minutes.  Meanwhile, cook the onions over medium heat until they start to become translucent.  Once cooked, drain the potatoes reserving 1/2 Cup of the liquid and return them to the pot.  Return the heat to high to allow the potatoes to dry for about 30 seconds before turning off the heat.  Mash the potatoes with a potato masher or use a hand mixer.  Add the butter and milk and continue to mash and mix until smooth and fluffy.  Stir in the salt and pepper.

Place the hamburger in with the onions and crumble and cook over medium high heat until evenly brown.  Remove from heat and drain.

Melt the butter and add the potato water before sprinkling the flour over the mixture, whisking until it is absorbed.

Stir in the milk and au jus, stirring until gravy begins to thicken.  Add additional milk if necessary and continue to cook stirring until desired consistency has been reached and gravy comes to a boil.  Taste and season with salt and pepper.

Add the cooked, drained hamburger and onions to the gravy mixture.

Cook the easy and convenient, tasty steamed broccoli in the microwave according to directions on the package.  Serve hamburger mixture over mashed potatoes and broccoli.
