Halibut with Ricotta Pea Puree

Bill asks me to prepare fish more than just about anything else these days.  There are numerous reasons why we should eat fish and there are plenty more reasons why one should consume halibut!  Besides the fact that the fresh varieties we brought home from Washington are delicious and flavorful, this fish also contains several nutritional benefits.  The American Heart Association encourages eating fish for omega-3 fatty acids, which are beneficial for the heart.  They say that omega-3 fatty acids may even improve your mood!  This white fish is also a great source of lean protein that is low in sodium, fat and calories.  We simply love it’s mild flavor and firm texture.  I wanted to change things up and decided broiling was the way I would prepare it this time and added some fresh vegetables that I had on hand!  It was so good and refreshing!

Ingredients:

Halibut fillets, skins removed
8 Asparagus, ends trimmed 
4 Carrots, peeled anddquartered lengthwise
1 Red onion, sliced thinly 
2 Tablespoons Extra Virgin Olive Oil
1/2 teaspoon Paprika, sweeet
1 9 ounce package Frozen Peas
1/2 Cup Ricotta Cheese
1 Tablespoon Butter
1 Tablespoon Lemon Olive Oil
Salt and Pepper, to taste

In a pan over medium heat, cook the onion in half of the olive oil until soft and caramelized.

Brush the carrots and asparagus with half of the olive oil and season with salt and pepper.  Coat the fish with the lemon olive oil, season with salt and pepper and sprinkle with the paprika.  Preheat the broiler and place the fish in the center of a pan, placing the vegetables around it. Broil until the fish is just cooked through, about eight to ten minutes.  Check it mid-way and turn the vegetables.

Meanwhile, microwave the peas according to the package directions, until just tender.  Drain and add the peas into to a food processor and pulse with the ricotta, butter and a pinch of salt to make a slightly chunky puree.  Divide the puree among plates and top with the fish, carrots and onion.  I strongly recommend this all-natural cheese, which is produced from the highest quality cow’s milk and whey.  It boasts a fresh, clean flavor.  There are no preservatives added and it tastes so fresh and the clean, milky flavor is like no other!

Drizzle with lemon olive oil.

We paired this meal with a wonderful Beringer Chardonnay!  It was absolutely delicious!!
