Hot Artichoke and Green Chile Dip

I was busy assembling my list of goodies for Bill’s big 50th birthday bash.  One of the easiest go to dishes I like to prepare while entertaining is hot artichoke dip.  I always have the ingredients on hand and it’s really easy to put together and everyone seems to really like it.  This is not a healthy dish by all means, due to the high levels of fat in the mayo and cheese but there are some good components within.  The main ingredient is the artichoke, which not only tastes great, but are also are high in iron, vitamin C, folacin, magnesium and fiber.  I typically use canned artichokes because they are the easiest to find and keep the longest, but keep in mind they have the lowest level of nutrients when compared to the fresh or frozen ones.  If you can, try using the fresh frozen ones.  They are great!

Chile peppers (Anaheim chiles) add a nice smokey element to the dip.  These peppers are picked when unripe, roasted, peeled, and canned.  They can be mild or hot, depending on the variety of chile used.  Look for them in the Latino food aisle of your local grocery store.  Peppers, by the way, are fruits, not vegetables and are high in vitamins including Vitamin C, Vitamin A and some calcium.  The Chilli pepper also contains capsaicin which helps to reduce congestion.  I recently read that chilli’s also act like a painkiller and release endorphins into the body which helps to reduce stress and creates a happy, relaxed feeling!  Maybe that’s why this rich and delicious dip was one of the first things to go at the party!

Ingredients:

2 Cups Mayonnaise
2 (15 oz)Cans Artichoke Hearts, (in water) drained and chopped
1 1/2 C Parmesan Cheese, grated
1 1/2 Cups Mozzarella Cheese, shredded
1 Garlic Clove, pressed
Pinch of Garlic Salt
2 Cans of Chili’s, including the juice

Drain artichokes and chop into small pieces.  Place all of the ingredients into a mixing bowl, mash, and blend well with a spoon.

Spray a shallow baking dish with non-stick cooking spray and spread dip evenly.

Bake 15-30 minutes at 350 degrees until bubbly and turning golden brown.

Serve immediately with crackers or crustini’s.
