Hot Artichoke Dip with Brie and Cream Cheese

I realize that I’ve posted a couple of versions of Artichoke dip.  It’s a pretty versatile dish as you can change it up based on ingredients that you have on hand!  What’s nice is that it freezes well, so you can prepare it in a couple of small Ramekins (a small dish for baking and serving portions of food).  I was looking around the fridge and had some creamy mild Brie to use up after a recent party; as well as some left over cooked onions and peppers.  It was easy enough to change up the original recipe a bit and it was delicious!  It seemed to be a bit more greasy, so we poured that off!



1 (15 oz) Can Artichoke Bottomss, drained and chopped
1/2 Cup Mayonnaise
4 oz. Creamed Cheese
1/2 Cup Parmesan Cheese, grated
1 Cup Mozzarella Cheese, shredded
1/2 Cup Onion & Jalapeno Pepper, cooked and chopped
1 Garlic Clove, pressed
Dash of Hot Sauce, to taste

Combine the cheese and microwave for a few seconds; just until soft and easy enough to mix.  Add chopped onion and peppers, garlic and hot sauce.

Combine well.  Drain artichokes and chop into small pieces.  Mix in the artichokes and spread the dip into a shallow baking dish.  Bake 15-30 minutes at 350 degrees until bubbly and turning golden brown.

Serve immediately with crackers, crustini’s or Pita Chips!
