Hot Spinach & Artichoke Dip

Artichoke dip is one of the most simple, but rich and delicious hot appetizer treats that can be tossed together in literally just minutes!

I have made variations from this simple recipe by using low fat mayonnaise, adding chopped spinach (This recipe with the images includes about a cup of chopped fresh spinach – but can be prepared simply as “Artichoke dip” for those who prefer not to have spinach.) and it can easily be doubled for a larger group.  I prefer to bake this in the oven so the cheese bubbles and get’s nice and brown, but have also prepared it in a crock pot so that it stays hot throughout a gathering over many hours.

This cooked image was borrowed.  Sometimes I get so busy that I forget to take pictures of the finished products from time to time when I have a lot going on! 

Ingredients:
1/2 Cup Mayonnaise
1 can Artichoke hearts
1 Cup Spinach (fresh, chopped)
1/2 Cup Parmesan Cheese – grated
4 oz. Mozzarella Cheese – shredded
1 Garlic clove

Make sure you start with (NON pickled artichokes).  Drain them and I prefer to chop them into small pieces so that it is distributed throughout, rather than big chunks.  Also use chopped fresh spinach.

Simply add all of the ingredients together and add the cheese.  Place into a sprayed oven safe dish

 

Bake at 350 for about 25/30 minutes or until bubbling and evenly browned on the top! Allow to rest for about five minutes.
Serve with crackers or as I prefer, slices crustini’s that have been drizzled with olive oil and rubbed with fresh garlic!
