I work on getting veggies into most of our meals… Carrots are one of Bill’s favorites, and it’s what I had on hand! I buy them in bulk at Costco most of the time and other night I thought I would change them up a bit. These are simple to prepare. They are actually quite healthy and delicious! Make some!
6 large carrots, peeled and cut thin
1/2 Large Sweet Onion
1 Garlic clove
1 Tablespoon Olive Oil
1 Tablespoon Butter
1/4 Cup Maple Syrup (I used sugar free)
Saute the chopped onions in the butter and olive oil until they start to become translucent. Wash, peel and slice the carrots Very thin on a grater or mandoline and add to the cooking onions. Continue to saute over medium heat until soft. Toss in maple syrup and season with salt & pepper. Serve hot along side of your meal!
