Mexican Bean Layer Casserole

Can you say “Girls night in for the Bachelor”?  Let me explain… For years, Monday nights getting together for the show is an excuse for girl time.  There is a few I can count on weekly (Jen, Mel, Eileen and I) get together for a huge variety of terrific food, adult beverages and “cackling like a bunch of Hen’s” as Bill would call it!  This was my creation to savor during the latest edition of the smut show!

This dish was inspired by the left over re fried and black beans found in my fridge following my adult kids house sitting while Bill and I enjoyed the weekend in the Valley.  The appetizer is a generous portion, that was quick and easy, but oh so tasty!

I’m including Weight Watchers Points™

Ingredients:
1/2 pound of Ground Turkey
one medium chopped Onion
1/2 Cup Yellow, Orange and Red Pepper chopped
1/2 Green Pepper chopped
4 oz. Cream Cheese
1/3 Cup low-fat Ricotta Cheese
1/4 Cup Taco seasoning mix
3/4 Cup re fried Beans
3/4 Cup drained black Beans
2 Tablespoons Italian dried seasoning
1 pint Salsa
3/4 Cup shredded Colby/Jack Cheese
1/2 Cup Mozzarella Cheese
Chips, toasted Baguette slices or what ever you want to enjoy it on!

Chop onions and peppers

Brown onion and ground turkey making sure to crumble meat into small pieces.

   

Bottom layer is “one”.  Begin by spraying baking dish with kitchen oil spray (such as Pam). I used my Pampered Chef pie baking stone.

Layer two: spread re fried beans in an even thin coating to cover bottom and sides of pie dish
Layer three: add drained, rinsed and dried black beans
Layer four: in food processor, blend ricotta and cream cheese and taco mix until creamy and pour over black beans. Spread evenly

 

Layer five: add seasoned ground turkey, onions and peppers, covering all sides equally
Layer six: pour salsa over entire layers and spread

Layer seven: Cheese!

Bake 350 for roughly 25 minutes.  Watch and remove from oven once top is hot, bubbly and dark golden brown.

Allow to rest to set up slightly before cutting!
