During a recent girls nights, I created this delicious and simple appetizer based on what was on hand in the fridge and pantry! We had some left over ground beef and onion taco seasoned meat mixture that needed to be eaten. When combined with all of the delicious flavors of a taco and baked until bubbly hot, then topped with chilled toppings and flavors – it became a hit! I allowed each of the gals to top their own hot dip with the flavors of their choice of fresh lettuce, diced tomatoes, guacamole, sour cream, peppers and salsa to be eaten on crispy tortilla chips.
left over ground beef taco meat (about 1.5 lbs. cooked with chopped onion and combined with dry taco seasoning)
1 large can Re-fried Beans
1 Package Cream Cheese
2 Cups Cheddar Cheese, shredded
Layer the bottom of a baking dish that has been sprayed with non stick cooking spray beginning with re-fried beans. Next, warm cream cheese in the microwave until softened and easy to spread. Using spatula, spread evenly across the beans. Add the crumbled cooked seasoned taco meat and top with shredded cheese.
Bake in preheated oven for about 30 minutes until hot and bubbling through and the cheese on top is melted and browning.
Serve with tortilla chips, allowing guests to top with the desired cold ingredients of their choice.
