Parmesan Salad with Bacon

this salad was served at a local restaurant that I served tables at when I was a youngster…  In the day, we used to have to toss the salad table side in big wooden bowls and it was quite impressive!  It was a “secret recipe” that everyone in town knew!  I’ve lightened my version up by choosing light ingredients.  You can add chopped cauliflower if you like, which adds a nice texture.  I simply didn’t have any on hand this time.  We don’t make this salad often, but it is absolutely delicious! It is rich and creamy.  I encourage you to give this one a try!

Ingredients:

2/3 Head of Iceberg Lettuce
3 Green Onions
1/2 Cup Light Mayonnaise
1/2 Cup Powdered Parmesan Cheese
1/4 Cup Buttermilk
1/4 Cup Splenda
1/2 Cup Crumbled Bacon
Salt & fresh ground Pepper

This salad is not a good one served as left overs…. so only prepare what you think you’re going to consume.  Rinse and chop crispy iceberg lettuce and keep cold in the fridge while you prepare the dressing

Combine chopped onions with all other ingredients except for the lettuce.  You can use less buttermilk if the dressing seems too runny.  I use Kirkland 100% pre-cooked chopped bacon in the freezer on hand to keep  things easier.  Toss the dressing with the chopped lettuce and enjoy immediately!
