Raspberry-Lemon Mojito!

So Minnesota is still on a hot streak (several days of hot, humid 100+ degrees temperatures outside on this lovely – humid Sunday afternoon.  After spending much of the morning outside biking, mowing and puttering in the gardens we were feeling like sipping on something light and refreshing!  I have some beautiful fresh mint growing on the porch, have a couple of beautiful lemons and some fresh raspberries on hand! We don’t usually go for the fruity drinks because of the added sugar, so I created this one with Splenda and it’s light and delicious!


White Rum
10 or so fresh Mint leaves
1/4 Cup fresh Raspberries
1/2 Lemon juice and one slice for garnish
4 Tablespoons of Splenda
S.Pellecrino – Sparkling Mineral Water

Place raspberries, Rum, mint and Splenda into beverage shaker and use a “muddler” to mash the fruit. (I used my Pampered Chef “mini-tart shaper” and it worked great!) Slice off one slice of lemon for a garnish and squeeze the juice of half of a lemon into raspberries.  Be careful not to drop in the seeds.

Next add in the Splenda and some ice cubes. Shake well and serve over ice in a pretty glass.

Top off each glass with about 1/3 Cup of Sparkling Mineral Water.

Garnish each with a slice of lemon and a sprig of mint.  I found if you use a straw, you enjoy the berries where as Bill’s all sunk to the bottom!  He didn’t complain though as he was sipping while working on his blog!
