Ingredients:

This was a little restaurant that we sat outside with our friends in Italy.  We enjoyed wine, pizza and conversation while we watched the hustle and bustle on the street before enjoying a sipper of Limoncello for dessert!

Broccoli Cheese Soup

I love soup and this time of year I tend to make and enjoy more!  I think that good food nourishes your spirit!  And warm soup soothes the soul!  On these chilly, damp days, just about any variety of soup is comfort food to me, and this recipe is cheesy and fulfilling apple appsen nicht.  Anytime there is soup going in my kitchen it just makes our house smell like a home and anytime we are enjoying a bowl, it makes me feel warm and cozy den downloaden!  This one is really easy and it is simply delicious!

Ingredients: 

1/2 Cup Butter
1 Large Onion, sweet, diced small
2 Garlic Cloves, peeled and pressed
1/2 Cup Flour
4 Cups Chicken Stock, I used homemade
3 Cups Whole Milk
1 Cup Half & Half
1 Cup Cream
8 Cups Broccoli Florets, cut into bite size pieces
2 Cups Carrots, peeled and cubed small
1/4 Cup Better than Bouillon Chicken
2 Tablespoons Smoked Paprika
2 Tablespoons Dry Mustard
1 Tablespoon Cayenne Pepper
Salt and Black pepper, to taste

While soup simmers, grate the cheese.  I found this quality medium cheddar cheese at Costco.  I do not recommend pre-shredded cheese because it can be resistant to melting and won’t incorporate well.  Reserve a small amount of the cheese for garnishing bowls.

Serve the soup immediately.

Pressure Cooked White Bean Chili

So I’ve blogged white chicken chili in the past, but this is a shortcut version that I prepared using mostly ingredients that I had on hand; transforming ingredients and by utilizing my pressure cooker stronghold crusader full full version free chip.  What I like about this dish is that you don’t have to plan ahead very much: no overnight soak is necessary.

Ingredients: 

1 lb dry White Navy Beans
8 Cups Water

Lock the lid in place. Over high heat bring to high pressure.  Reduce the heat just enough to maintain high pressure and cook for 35 to 45 minutes.  Turn off heat and allow pressure to come down naturally.  Remove the lid and test the beans for doneness. They should mash easily and have a creamy texture. If just short of tender, replace the lid and simmer until done.

Once the beans and mirepoix are cooked, add the other ingredients.  Combine the cream and flour and stir into the chili.  Continue to simmer stirring constantly until the chili reaches your desired thickeness.

You can serve with sour cream, fresh cilantro, and additional shredded cheese.

Stuffed Zucchini Boats

I always stuff peppers but when I recently found some relly good looking zucchini at the grocery store, I thought they would make a different kind of healthy meal herunterladen.  By this time of the year, I’ve usually already prepared zucchini in so many ways including sautéeing, slicing into ribbons and a lot of grilling, so I decided to stuff it itunes neueste version download kostenlos!  You could use just about any variation of ingredients that you can think of to fill your boats, but since I typically utilize ingredients that I have on hand in my fridge and pantry, that is how I prepared this batch free music download German schlager.  I transformed some leftovers, but I’ll also give some suggestions of other options within the recipe below.

3 Large Zucchini

1 Jalapeno, roasted, peeled and chopped (optional)

1 Egg, beaten

Whisk the egg and add the pre-cooked stuffing.  Then combine with the ground beef mixture with the peppers and the egg.

when the zucchini is par-cooked, remove it from the water and allow it to cool enough to handle.  Then slice it lengthwise and scoop out the center, leaving a little flesh to form a boat.

Put a little of the sauce of your choice in the bottom of the baking dish.

Place the filled the zucchini boats on the sauce and top each with the shredded cheese.

Bake uncovered for 20 to 30 minutes until they are heated through and the cheese bubbles and has browned on top.  Serve hot!

Fried Pickle Roll up Egg Rolls

Ingredients:

Dill Pickles
Cream Cheese, softened
Corned Beef or Pastrami
Egg Roll or Wonton Wrappers
Water, to seal wrappers
Sunflower and/or Grape seed Oil, for frying
