Bon Appetite!

Roasted & Stuffed Bell Peppers

I was inspired to make this dish because I had about a cup and a half of left over steamed white rice after having Chinese take out.  I had a couple of green peppers on hand and this is a go-to dish we change up a bit and can eat over and over.

2 green peppers
1 1/2 Cups of cooked white rice
1/2 lb. Ground Turkey
1/2 Onion
4 small yellow & orange peppers
2 Garlic Cloves
1 Tablespoon Salt
fresh Ground Pepper
1/3 Cup of salsa
1/2 Cup fresh Spinach
1/4 Cup Parmesan cheese
1/2 Cup Mozzarella Cheese
1 Tablespoon of Italian seasoning
1 Can of Italian tomato sauce

Start by browning the chopped onion and ground turkey until meat is cooked and onion is translucent.

Preheat oven to 350
Add chopped sweet peppers and garlic and cook for a few more minutes.  Salt & Pepper to taste.
Mix in salsa and rice and Italian seasoning.  Wash peppers and cut in half.  Remove stems and center cores.
For quick preparation, place the halves into a baking dish that has been sprayed with non stick cooking spray and microwave pepper halves on high for two minutes.
Remove from microwave and spoon the turkey and rice mixture evenly into each half.
Top with chopped spinach

Pour the tomato sauce evenly over the peppers

Sprinkle with Parmesan and Mozzarella cheese and bake for about 25-30 minutes

We enjoyed this meal with a nice glass of Beringer Merlot!
