Seared Cod with fresh Peppers

Who doesn’t like Cod?  This is a quick and delicious healthy option for a nice fish dinner at home!  Since we’ve been trying to incorporate more fish into our diet, changing up the preparations makes eating these meals more enjoyable!

Ingredients:

2 Cod Fillets

Dry Rub:
1 Tablespoon Paprika
1 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander
1/2 teaspoon Turmeric
1/2 Lemon Rind
1 teaspoon fresh Dill weed

1 Tablespoon Vegetable Oil, divided
1 Tablespoon Butter, divided

1/2 Large Onion
1 Garlic Clove
2 Carrots
1 medium Zucchini
1/2 Cup Green Bell Pepper
1 Cup Yellow, Orange & Yellow Peppers
Salt & Fresh Ground Pepper

The potatoes are “Simply Potatoes”, which are a fresh option that are cleaned, cut and ready to go in the dairy section of the grocery store.  I prepared these in a splash of hot oil and butter and seasoned them with salt & pepper.

Begin the preparation by sauteing the chopped onion and carrots in half of the oil & butter until soft.  Set aside while you cook the fish.

Cook and sear the rubbed fish over medium – high heat – browning on one side before turning.  Squeeze the juice of half of the lemon if you like it!  It adds a bright flavor.  Cod takes just about four minutes or so on each side.  It is fully cooked when the inside is pure white and flaky!

Once the fish is cooked, allow it to rest while you flash cook your peppers and zucchini.

Bring the Onions and Carrots to high heat again and toss in the peppers.  Cook for about two minutes prior to adding the zucchini tossing frequently!  Cook an additional minute or two leaving vegetables crispy!

Season with salt & pepper to your liking!
