Seasoned Rice with Roasted Squash & Garlic

I enjoy creating easy and delicious side dishes utilizing ingredients that I have on hand in my refrigerator and pantry.  Recently, I had some left over simple white rice that had been steamed, along with some roasted garlic and squash.  I had some Tilapia from Costco so this dish was created very simply and it was  rich and delicious!

Ingredients:

2 Cups cooked White Rice
1/2 Onion
1-2 Tablespoons EVOO
1 Tablespoon Butter
4 Garlic Cloves, roasted
1 Cup Squash, roasted
2 Tablespoons fresh Flat Leaf Parsley, chopped
Salt & Pepper

Chop the onion fine and saute it in the olive oil and butter over medium low heat until translucent.  Smash the roasted garlic and add it to the onions just until warmed through and then add the left over cooked white rice, as well as the parsley.

 

Cube the roasted squash and add it to the rice mixture.  Season to taste with salt & fresh ground black pepper.  Heat over medium low heat until all ingredients are hot!

Serve along side of your favorite dinner!  We enjoyed this side dish with a nice fresh piece of Tilapia, as well as Bill’s favorite salad and a beautiful bottle of Girard Sauvignon blanc.
