Stuffed Chicken breasts with Brie & Roasted Red Pepper

I’m always thinking about how we can “change up” the chicken because we eat a lot of it… I had some Brie on hand, as well as beautiful red peppers, so I was inspired to create something that would fulfill us and even included some healthy ingredients!  This dish is actually quite simple to make and is very tasty!  Give it a try!


1 boneless, skinless Chicken breast per person
1/2 ounce of Turkey Ham slice
Brie sliced
fresh Red peppers
2 Tablespoons each Mozzarella
fresh Spinach
Olive Oil

Start by cleaning and coring the red peppers.  (I do extra to have on hand for another dish later) Rub lightly with olive oil, salt and pepper and bake on stone at 350 for about 25 minutes until soft.  Slice into pieces and allow to cool slightly.

Pound the chicken breasts thin inside of parchment paper

layer the chicken with a piece of turkey ham, Brie, mozzarella, fresh spinach leaves and the roasted red peppers

Roll tightly and place seam side down into a baking dish that has been sprayed with non stick cooking spray.  Season with salt & pepper. Bake uncovered for roughly 35-45 minutes until chicken is cooked through and browns nicely on top.

Allow to rest for five to ten minutes before plating. I served with fresh green beans and topped with chicken gravy that was left over from a previous meal

We enjoyed this with an amazing Cabernet Sauvignon made by Mitch Cosentino!
