Stuffed Mushrooms

Stuffed Mushrooms are a wonderful and tasty treat!  You can modify the ingredients to make them taste different every time you make them based on what you have in your fridge and pantry.  I love, love love them and have more recently been making them with lighter ingredients than the traditional heavy cream cheese and bacon that was my go to filling before I started trying to slim down.

This is an image before baking.  Once they have been baked and are done, they are a golden grown and juicy and delicious! I got so busy the night of the gathering, I forgot to take a snapshot after they were finished.

Ingredients:
15 firm large white Mushrooms
1/2 Onion chopped fine
1 Tablespoon Butter
1 Tablespoon of Olive Oil
2 cloves of Garlic
Kosher Salt & fresh Black Pepper
1 teaspoon of White Wine vinegar
2 Tablespoons of Sweet Vermouth
1 Tablespoon of Italian seasoning
1 Tablespoon of fresh Oregano
2/3 Cup (left over) cooked ground Turkey (included onions and celery)
4 Oz Cream Cheese
1/3 Cup of Sour Lean

Topping: 1 teaspoon of melted Butter & 2/3 Cup Panko Bread Crumbs

Instructions:
With a damp paper towel, remove any dirt from outside of mushrooms.  Using a spoon, remove the stems and center of the mushrooms and chop stems about the same size as the onions.

 

In pan, melt butter and oil and saute onions until translucent and then add chopped mushroom caps.  Cook until browned.

Season with salt & pepper.

Add ground turkey and smashed garlic.  Use masher and continue browning and crush until very fine.

 

chop fresh oregano, Italian seasoning, cream cheese, vinegar and vermouth .  Melt and stir together until smooth

 

Stir in sour cream and set aside to cool to touch.  Spoon into piping bag (with no tip)

 

Topping:
melt 1 teaspoon of butter in microwave and toss with Panko breadcrumbs.  Sprinkle over top.

Bake at 350 for about 20-25 minutes.
