Stuffed Sweet Potatoes

I’m always looking for creative ways to use ingredients that I have on hand.  Recently, I had plans and wasn’t planning to be home for dinner with Bill.  I had some left over rotisserie chicken and he loves sweet potatoes, so I decided to stuff one for his meal download the housing benefit application!

Sweet potatoes, (commonly labeled as yams) are readily available, inexpensive, and delicious. Ingredients:

Baked Sweet Potato
1 Tablespoon Olive Oil
1/4 Cup Cheddar Cheese, shredded
1/2 Onion, sliced
1 small Garlic Clove, pressed
1/2 Cup Cooked Chicken
Salt & Pepper to taste

Saute onions in oil in a skillet over medium heat until caramelized.  Add garlic and saute for another minute or two t online mails.
