Stuffed Sweet Red Peppers

We never get tired of stuffed peppers!  Bill loves any color and it doesn’t matter what time of the year it is, this dish can be changed up to enhance just about any flavor combination based with what you have on hand in your fridge and pantry!   This version is a very simple one.  Sweet, spicy and delicious!

Ingredients:

3 large Red Bell Peppers
1/2 lb. ground Turkey
1/2 lb. 80-20 ground Beef
1 medium Onion
2 Tablespoons Vegetable Oil
2 large Carrots
2 Jalapeno peppers
2 Garlic cloves
1 Tablespoon of dried Italian seasoning
2 Cups cooked Rice
1/2 Cup fresh Basil, chopped
1 can Hunts pasta sauce
1/2 Cup shredded Parmesan Cheese
1/2 Cup part skim Mozzarella
salt & pepper

Peel & chop the onion and carrots into small cubes. Brown the ground meats with the onions and carrots in the oil until meat is cooked through and vegetables start to become soft.  Remove the core and seeds of the jalapeno peppers, chop and add them as well.  Add crushed garlic, Italian seasoning and Season with salt & pepper.  Cook an additional 2 minutes or so and then stir in the cooked rice.

Clean peppers and cut them in half.  Remove stems and cores and place them cut side up in a baking dish that has been sprayed with non stick spray.  Stir in 1/3 of the can of prepared pasta sauce and mix through.   Stuff each pepper with a sixth of the mixture packing them full with a slight mound.

Pour remainder of the sauce evenly over the peppers and cover with foil.  Bake covered at 350 for about 20-25 minutes.

Remove foil and sprinkle with Parmesan cheese and then a layer of Mozzarella

Bake under broiler until cheese is melted and browned!
