Bon Appetite!

Sweet Pepper Caprese Salad

Written By: Chris - Mar• 23•12

This is a fresh and delicious variety to the traditional Caprece.  We love the baby red, yellow and orange peppers that you can find in bulk at Costco.  These peppers are wonderful cooked, stuffed, roasted or just cut up and used fresh on top of a fresh salad.  Both Bill and I love Balsamic and anything that comes close to a Bruchetta, so this was a quick version one evening for a side salad!

Cut up about equal parts of peppers and chunk a mozzarella cheese from a log.  Add a few fresh tomatoes sliced for brightness.

In a small dish, mix about 2 tablespoons of extra virgin olive oil with 1 tablespoon of aged balsamic.  Add one crushed garlic clove, salt and pepper.
for an added brightness, sometimes I will grate in a half of a lemon peel and a tablespoon of the juice of a lemon.

Toss gently and add fresh basil!  Simple and delicious!

Enjoy!

Cheers
