Roasted Cauliflower and Spinach Salad

Ingredients:

3/4 to one head Cauliflower, cut into florets
Extra Virgin Olive Oil (about 4 Tablespoons)
Salt & Pepper, to taste
2 handfulls fresh Baby Spinach or Arugula
1/3 fresh Lemon (2 Tablespoons lemon juice and rind) 
1 Tablespoon Dijon Mustard
1/4 Cup Craisins
1/4 Cup dried Blueberries
1/2 Cup pine nuts, toasted
Parmesan cheese, shaved to taste

Preheat your oven to 400 degrees and spread the chopped cauliflower florets onto a baking sheet and drizzle with olive oil before tossing with salt and pepper elster zertifikatsdatei erneut herunterladen.  Roast in the oven for about 30 minutes, turning from time to time until it is browned to your liking and cooked through.  Remove from the oven and allow to cool a bit app for a fee.
