Roasted Prime Rib

I rarely have an epic failure while in the kitchen, but a few weeks back – I was terribly disappointed with a rather large cut of meat I was cooking while following instructions, rather than going with my heart… and it really ticked me off!  No, it wasn’t a prime rib roast, but it was almost as expensive – but I won’t bore you with the details!  It was especially embarrassing because we were hosting a dinner with some friends, whom happens to be an awesome cook!  I was trying something new on my smoker and I should have just gone with my gut…  Our guests claimed it wasn’t that bad, but I think they were just being nice shadow fight 2 special edition for free.  I assured them that I will redeem myself soon when I host them again.  I have to let mishaps like that go because I know I haven’t presented Bill with too many unappetizing meals, but it had been bugging me and I really wanted to out do myself (for my pride if for no other reason) and decided to serve a prime rib last weekend for another meal that I was hosting.  I will say it turned out phenomenal and I glowed with my friend Carries review: “Thanks again for having us over last night.  That really was one of the best dinners we’ve had in a long time.  You’re a great chef!”  … Ok, I feel better now!

Keep in mind when preparing a meal like this – it’s a treat musik downloaden mit link einfügen.  USDA prime cuts of meat are typically very expensive.  Prime rib is one of these cuts, so you don’t want to mess it up!  When choosing a rib roast, look for a prime cut that is the size you want and that has the most marbling.  (bone in or out is your choice).  I found a nice eight pound roast that I cut in half.  Perfect to serve four and saved the other half for another special day.  If cooking a bone-in roast, it doesn’t need a rack, since the bones serve this function.  But if you choose the boned roast like I did, it benefits from being cooked on a rack download movies from tvthek.  This preparation is really quite simple and has only a couple of ingredients that most people have on hand.  Just don’t over cook it!!

Ingredients:

4 pound Prime Rib Roast
1/4 Cup Butter, unsalted softened
4 Tablespoons herbes de Provence
Freshly ground Black Pepper & Kosher Salt
Au jus Sauce:
1/2 Cup White Wine
2 Cups Beef Stock (I used Better than Bouillon Beef)
1 Cup Beef Drippings, from baked roast, some fat removed
1/2 Cup Heavy Cream

Bring roast to room temperature, about 4 hours.

While the roast is resting prepare the au jus.  Drain some of the fat, leaving about a cup of the juices from the roast.  Place the roasting pan on top of the stove over medium high heat.
Add in the wine and cook, whisking for about eight to ten minutes, stirring and scraping any brown bits.
Add in the cream and lower the heat to a simmer.  Cook and reduce the juice by half (takes about 20 minutes).

We enjoyed this roast with sides of Sweet Potato Au Gratin, stuffed mushrooms and asparagus.  I also did a seasonal roasted beet salad, which included some tomatoes, avocado and roasted acorn squash.  Super fresh!

Fresh White Bean, Lemon Salad

I decided to make this salad after taking the recent pressure cooker class.  I wasn’t tasked to prepare the beans themselves that day, but did help assemble a salad similar, preparing the vinaigrette download protected images.  Green, black, white, pink, or red and shaped like tiny spheres, strings, or kidneys: Beans come in all colors, shapes, and sizes. Ingredients:

Shrimp and Lobster Mac and Cheese

So I had picked up some great looking little fresh lobster tails at Costco the other day; thinking I was going to treat ourselves a bit.  I don’t indulge too often in Lobster because A, you never know how fresh it is here in Minnesota and B, it’s a little spendy.  These passed my poke and smell test; so into my cart they went.  When it was time to start thinking about dinner a few days later, I asked Bill if he wanted Lobster Bisque, or Lobster Mac and Cheese.  Did I really need to ask?  Bill loves pasta and since I’ve been cutting back a bit on the carbs, he was excited.  Can you say “Happy Dance”? hallelujah noten trompete kostenlos!

I realize that the normal go to cheese for lobster mac is Gruyere or Fontina, but I didn’t have either of those.   I do my best to utilize ingredients that I have on hand, while trying to avoid extra trips to the grocery store .  After rummaging through the fridge, I found a new tub of Mascarpone that I had picked up from Trader Joe’s; a big block of White Cheddar, some shredded Cheddar and a bit of shredded Monterey Jack – so I was going to try something new!  Although Lobster was the luxurious centerpiece to this dish, I also decided to stretch it a bit and used it in combination with some nice left over cooked shrimp that I had Download windows 10 as iso file.  It takes a bit of steps to prepare, but this mac and cheese is a fantastic meal and worth every effort!

Ingredients: 

1 Pound Pasta, I used shells – but use what you like!
4 Lobster Tails, (about 1 lb. cooked meat shelled and deveined)
1 lb. cooked Shrimp, shelled and deveined
1 Onion, chopped small
2 Tablespoons Extra Virgin Olive Oil, to cook onion
Cheese Sauce:
4 Tablespoons
4 Tablespoons Flour
1 Tablespoon Cayenne Pepper
1 Cup Almond Milk
1 1/2 Cups Half & Half
1/2 Cup Heavy Cream
Salt & Pepper, to taste
Topping:
2 Tablespoons Butter
1 Garlic Clove, pressed
1/2 Lemon ZEST
4 Tablespoons Fresh Oregano, chopped
1 1/2 Cups Pankio Crumbs
4 Tablespoons Fresh Parsley, chopped for garnish
Salt & Pepper, to taste

Start by washing and cleaning your shrimp and lobster.  (I had freshpre-cooked shrimp)

Add an inch of water in the bottom of a stock pot, that has been lined with a steam tray Download live video from facebook.  Once the water is boiling, add the lobster tails within the shells and cover.  Steam for no more than seven minutes!  Remove from heat and allow to cool on paper towels.

Chop both the shrimp and the lobster into small bite sized pieces.  Meanwhile, remove the steam pan and using the same water you steamed the lobster in, add salt and enough additional water to cook pasta according to the package directions, making sure the noodles are extra al dente.  (I pulled them out about two minutes earlier than I normally would.) Drain and set aside.

When the sauce has thickened, gently fold in and melt the cheese, beginning with the mascarpone.

Mix between each kind of cheese until it melts completely before adding the next.

Add the pressed garlic, lemon zest and chopped oregano, cooking and stirring for about a minute until it becomes very fragrant.

Bake uncovered for about 20 minutes until the pasta is bubbly and the crumbs are browned on top.  Allow to sit for a couple of minutes before digging in to set up!

We enjoyed this meal paired with a terrific 2004 Cabernet Sauvignon by TARA BELLA beautiful Tuesday pictures for free.  It was awesome and the mac was so rich and creamy and cheesy, all I served along side of it was a simple green salad!  We shared with Bill’s folks and had plenty of left overs.

White Enchiladas

So I like the taste of Enchiladas, but I LOVE white enchiladas!  I am however, not a fan of the way the tortillas usually turn out when I roll them, regardless of which type I make herunterladen.   This recipe is so flavorful and it’s a great way to use up left over cooked chicken or turkey.  The corn tortillas always seem to crack down the sides when rolling them up with the filling; causing everything to fall out herunterladen.  The traditional way to make them is to fry the tortillas in hot oil for a few seconds on each side.  I think this method works, but it also adds a lot of fat and calories and I refuse to use flour tortillas for this dish, because the flavor just isn’t the same do not download whatsapp group media.   I have heard that dipping the tortillas in warmed enchilada sauce before your roll should help, but that doesn’t usually work for me either auslogics disk defrag deutsch herunterladen.  The moral of this story is that I have found that the easiest way to make great tasting enchiladas is to layer the ingredients like a lasagna.

Ingredients:

1 1/2 to 2 Cups Cooked Turkey, chopped
2 Poblano Peppers, roasted, seeded and chopped
1/2 Onion, chopped
1 Tablespoon Extra Virgin Olive Oil 
2 Garlic Cloves, pressed
1/2 Lime, juice and zest
1 teaspoon Paprika
Cayenne Pepper, optional if you need a little extra kick
Salt & Pepper, to taste
3 Tablespoons Butter
3 Tablespoons Flour
1 Pint Half and Half
1 bunch Cilantro, chopped
1/3 Cup Sour Cream
1 Cups Mozzarella, shredded
1 Cup Monterrey Jack Cheese, shredded
6 White or Yellow Corn Tortillas
Red Sauce or Salsa, optional (because I had it and like the combination!)

Cool sauce for for at least five minutes or so and add in the sour cream and cilantro.

Stir in the chicken mixture.

Place the tortillas on the bottom of the pan and begin layers of the chicken white sauce and cheese.

Repeat layers and add remaining cheese over top.

Bake in preheated oven for 20-25 minutes or until enchiladas are heated through and sauce is bubbly. Turn on the broiler and broil until top is nicely golden.

Serve on top of red sauce if desired and top with chopped lettuce and sour cream.

We paired this meal with the 2011 Right Bank Anderson Conn Valley wine, that is a blend of Cabernet Franc and Merlot.  Delicious!

Stuffed Cabbage Rolls

I’ve been hungry for cabbage rolls lately and decided to prepare them in my new Fagor 8 quart pressure cooker, following a class my friend Heather and I recently took to learn how to use them herunterladen bei amazon prime!  I came up with my recipe after reviewing one that was included with my cooker and some other stuffed cabbage varieties on line.  Using a couple kinds of meat also gave me the chance to play with my Kitchen Aid Food Grinder music from youtube pc!  I received the grinder attachment some time ago as a gift.  It connects to my Kitchen Aid stand mixer and is ideal for grinding meats, grating cheese, and all kind of other preparations download thalia ebook.  This recipe is really easy and quite a time savor using the pressure cooker.  In the future, I would probably add more rice and also jalapenos for some heat kostenlos counter strike source downloaden.  When we reheated them later, we added some canned pasta sauce and additional cheese on top.  They were great!

Ingredients: 

1 Cabbage head, leaves and core
1 lb safari browser. Ground Beef
1 Pork Chop, ground
1 Onion, ground
2 Chicken Sausage, out of casing ground
1 Can Tomato Sauce
1 Can Tomato Soup
1 Cup Mozzarella Cheese, shredded
1/2 Cup Colby Jack, shredded 
2 Cups Water
2 Tablespoons Chicken Bouillon Powder
3/4 Cup White Rice, uncooked
2 Garlic Cloves, pressed
1 Jalapeno Pepper, diced
2 Eggs
Paprika
4 Tablespoons Dried Parsley
Salt & Pepper, to taste

Remove the casings from the chicken sausage and discard.  Chop the peppers and combine with the ground meets, half of the tomato soup, the onion, rice, eggs, garlic, and shredded cheese.

Season with salt and pepper.

Place about 1/2 cup of this mixture into each cabbage leaf and fold in the sides.  Roll them and arrange them inside the cooker on the liquid, seam side down.

Top each roll with the remaining tomato soup.

Close the lid, lock it and bring the pressure up.  Reduce heat to medium and cook for 30 minutes on high, or 65 minutes on low.

Release the pressure and wait for the safety gauge to drop before opening.

Remove the rolls along with some of the liquid and serve.

We topped the cabbage rolls with some additional grated Parmesan and paired them with a delicious 2013 STEENBERG Sauvignon Blanc.
